For example, with the car stopped, if I press the throttle a little the car goes to 2.000/2.500 rpm, it is impossible to maintaine for example 1.500 rpm, or goes up or goes to idle, the problem is when I drive in the city in 1st or 2nd gear, at low rpms, the car is very uncomfortable, because of the ( I don't know the word, sorry )... like you are going press the throttle, leave it, press, leave it.
It is normal in the 33 16V? If not, were can be the problem, the body throttle switch? The air mass meter??

Yes it is hard to maintain rpm from1 -2k rpm
16v engine should be reved higher then 2500 rpm because of many reasons.
If your idle is not ok let say around 900-1000rpm, then it can be anything from what you have told or:
- bad fuel
- cloged fuel filter or injectors needing cleaning
- air leak on any of rubbers of air intake plenum
- clogged air filter
- air leak on vacum hoce to brake servo
- air leak on fuel vacum rail
- old spark plugs with deposits

I usualy use unleaded 95, and I drive on highway arround 4.000 rpm for 500 km. May I use 98 RON?
I bought this car 2 months ago, and I changed oil, oil filter, fuel filter, air filter, clean the idle actuator and air mass meter with a carburetor cleaning spray, changed the spark plug (were Bosch) I put platinum NGK, and cleaned the cooling system.
I'll check again tha intake for leaks and remove the inyectors to clean it.

As long as it is unleaded you can use 98octane fuel also.
Maybe I wasn't clear before
ON/OFF/ON throttle is normal on every 16v and even more problem on P4 because of 4x4 which doesn't allow bigger wheel slipage leading to aceleration bump or engine stall.
You need to learn to drive it with very light foot or compesate with pressing clutch.
Because of ecology more then fuel savings ECU is programmed with fuel cut off, which stops fuel when you don't press throttle pedal. New cars don't cut of fuel imidiatly they reduce fuel until it reaches idle, making that transition period smoother. Also tune chips don't have so drastic fuel cut off.
Idle should be from 900-1000rpm and steady, if idle is jumping from let say 700-1200 up and down then there is problem.
Cleaning injectors should be done at least once in 100k km, usual way is in ultrasonic bath/pool.
Extra jerkines can also come from many things
- clutch disc plate at end of life
- problematic lambda probe, ecu...
